Join Santiago Lastra, the ‘Nomadic Chef,' on a culinary journey exploring Mexico’s bright, dramatic flavours and authentic cooking techniques.
Ahead of the launch of his debut restaurant Kol, opening in central London early next year, Santiago will bring his acclaimed Mexican dishes to a series of Masterclasses at Mimo London’s Cookery School. Originally from Mexico City, Santiago made his name following stints at restaurants including Mugaritz in San Sebastian and the Nordic Food Lab in Copenhagen. In 2017, Santiago joined the Noma Mexico pop-up in Tulum as Rene Redzepi’s right-hand man and project manager.
In this class, you will learn how to prepare traditional Mexican dishes using local British ingredients. You will capture the essence of these distinct flavours and take the recipes home with you.
· Tostada with beetroot, smoked eel, and pink Mole
· Tikin Xic — whole grilled skate wing, corn tortillas, and Xnipec
· Tamal — chocolate steam cake, corn husk cream, and sea buckthorn
The class will end with a delicious lunch and carefully chosen wine pairings, served around our communal dining table. You will be able to enjoy what you and your fellow classmates have cooked using your newly acquired knowledge.
Reflective of the offering that has been curated for Kol, wine served on the evening will be sourced from biodynamic winemakers from Central and Eastern Europe, including Slovakian vineyard Slobodne - who will be making the Kol house blend of white and red wines.
